Lamb Meatballs

Ingredients: 

Meatballs:
2 lbs. ground lamb
1 egg
8 tablespoons of water
3/4 tablespoon table salt
1/2 cup of feta cheese
1 1/4 cup of panko breadcrumbs
2 small minced garlic cloves
2 tablespoons of tomato paste
Pinch of red pepper flakes
2 tablespoons of olive oil
3 tablespoons of chopped parsley
Zest of 1/2 Lemon

Sauce:
28 oz. can of crushed/pureed tomatoes
1 minced clove of garlic
1 medium onion, chopped
Zest of 1/2 Lemon
1 teaspoon dried oregano
1 teaspoon of salt
2 tablespoons of chopped parsley
1 tablespoon thinly sliced mint
1/3 cup of pitted chopped olives
Pinches of red pepper
1/4 cup of crumbled feta

Directions:
1. Mix the following ingredients in a large bowl: water, eggs, breadcrumbs, feta cheese, salt, pepper flakes, garlic, parsley, tomato paste, lemon zest, and ground lamb.

2. Form the mixture into small balls.

3. Cook balls in skillet with olive oil. 

4. To make your sauce, combine all of your ingredients in a saucepot. Cook Greek Red Sauce on medium heat for about 25 minutes

5. When meatballs are done, add sauce to skillet and let them simmer for an additional 7 minutes.

Honey Balsamic BBQ Meatballs

Ingredients:

Meatballs:
1/2 lb. ground pork
1/2 lb. ground beef
2/3 cup of water
1/3 uncooked quinoa
1 large shallot
1 tablespoon of Worcestershire sauce
1 whisked egg
1/8 teaspoon of dried rosemary
1/4 teaspoon of dried thyme
Salt
Pepper

Sauce:
3/4 cup of Ketchup
1 cup of balsamic vinegar
1/4 cup of honey
1/3 cup of sugar
1 tablespoon of Dijon mustard
1 tablespoon of Worcestershire sauce
1/4 teaspoon of garlic powder
Salt
Pepper

Directions:
1. Boil following ingredients in a large pot: balsamic vinegar, ketchup, honey, brown sugar, Worcestershire sauce, Dijon mustard, garlic powder, salt, and pepper.

2. Lower the heat and let Honey Balsamic Vinegar sauce simmer for 45 minutes.

3. In a bowl combine cooked and cooled quinoa, egg, shallot, garlic, Worcestershire sauce, dried thyme, and rosemary. 

4. Mix your ingredient then add in raw pork and beef.

5. After you obtain the consistency you want, form the meatballs with your hands. 

6. Put them on a baking sheet in heat at 400 degrees for 15 minutes.

7. Coat meatballs in sauce and enjoy!

Spinach & Turkey Meatballs

Ingredients:
1lb. Ground Turkey
1 Egg
1 Cup of Spinach
1 Tablespoon Garlic Powder
1/2 Tablespoon of cumin
1 Tablespoon of salt

Directions:
1. Chop spinach in a food processor, or very carefully with a knife.

2. Mix the following ingredients in a large bowl: chopped spinach, ground turkey, eggs, garlic powder, salt, and cumin.

3. Roll the mixture into balls.

4. Place balls on baking sheet and heat in oven for 20 minutes at 350 degrees. Then, enjoy!
