CHEESY JALAPEÑO LATKES
1 cup cheese
2 jalapeños, chopped
1 lightly beaten egg
1/2 cup flour
• Grate 4 potatoes, and stir with 1 cup cheddar cheese and 2 minced jalapeño peppers.
• Then add 1 lightly beaten egg, 1/2 cup flour and combine well.
• When it’s mixed, make the latke mixture into golf ball sized lumps, then flatten them out and fry them.
• Once it’s golden and crispy on each side, place it on a paper towel to soak up the oil.
