Berry Blast Pops

1 cup blueberries
1 1/2 cup strawberries
4 tbsp honey
1 cup full fat coconut milk
1/3 teaspoon vanilla extract

  1. Start by adding 1 cup of blueberries and 1 1/2 cups of strawberries to a food processor, then add 1 tablespoon of honey.
  2. Pulse it so the berries get chopped up, but don’t totally blend together.
  3. Then in a small bowl, mix together 1 cup of full fat coconut milk, the remaining 3 tablespoons of honey, and 1/3 teaspoon of vanilla extract.
  4. Now take a popsicle mold and take turns adding in the fruit and the coconut milk mixture so that they layer, and use a stirrer to gently swirl them a little more.
  5. Let them freeze for a few hours, and then serve!

1 store-bought graham cracker crust
1 cup strawberries
1 cup blueberries

  5. Let that soak for about 30 minutes. To serve, top your pie with the berries and some whipped topping.
