Muffin Tin Meals You Need to Try Today!

Muffin tins aren’t just for muffins and cupcakes anymore. You can make fast, portable meals like eggs and bacon, spicy shrimp puffs, and chips and dip, all in the tin! Try something new and put these fun recipes into action!

Egg-Bacon-Hash Brown Cups

Muffin tin
6 Pieces Bacon
6 Eggs
3 Potatoes (Hash Browns)
Cooking Spray
Salt & Pepper

1. Preheat the oven to 400°F.

2. Spray muffin tin with cooking spray.

3. Grate raw potatoes

4. Bake grated potatoes in a baking dish for 45 minutes (salt and pepper as desired for seasoning)

5. Increase oven to 420°F.

6. Scoop grated potato into each muffin cup.

7. Gently press the sides and bottom in each muffin hole to make a nest, then spray with cooking spray.

8. Bake for 15-20 minutes.

9. While that is baking, cook bacon strips for 4 minutes

10. When the nests are brown, remove hash browns from the oven and let them cool.

11. Wrap bacon around the top of the nest.

12. Crack an egg into each nest.

13. Bake for 13 minutes

Spicy Shrimp Puff Cups

Muffin tin
Canned biscuits (refrigerated)
Cooking Spray
13 Shrimp – uncooked deveined, shelled, tails removed, chopped
1 Cup shredded Monterrey jack cheese
1/4 Teaspoon salt
1/4 Cup mayonnaise
1 Tablespoon chopped red bell pepper
1 Teaspoon spicy chili powder
1 Clove minced garlic

1. Preheat oven to 350°F.

2. Spray muffin tin with cooking spray.

3. Cut each biscuit in half... in each muffin cup there should be half a biscuit

4. Sculpt each half biscuit into the bottom and up the sides of the muffin cups.

5. In a bowl, mix all ingredients – don't include the shrimp yet.

6. Place 1 tablespoon of the shrimp mixture on top of each biscuit.

7. Place a whole shrimp on top of each cup for a finished look.

8. Bake for 20 minutes

Spinach Chip and Dip Cups

Muffin tin
Cooking Spray
12 Wonton wrappers
3 oz Frozen spinach - thawed and chopped
1 Minced clove garlic
1/2 Cup grated Parmesan cheese
1 Cup chopped cooked mushrooms
1/4 Cup sour cream
2 oz Cream cheese
Salt and pepper

1. Preheat oven to 325°F.

2. Spray muffin tin with cooking spray.

3. Press 2 wonton wrapper into each cup (make sure they are off center from each other so they really create the cup look), and spray with cooking spray.

4. Bake 5 minutes

5. Mix the spinach, sour cream, mushrooms, Parmesan cheese, cream cheese, and salt and pepper into a bowl. (salt and pepper as needed)

6. Scoop mixture into the wonton cups until it reaches the top.

7. Bake for 8-10 minutes
