1 turkey 8-12 lbs.
Your favorite hot sauce
• Preheat oven to 325° F.
• Whisk together 1 cup of your favorite hot sauce, 2/3 cup pulp free orange juice, 1/3 cup maple syrup, 2 tablespoons soy sauce, 1/2 teaspoon chili pepper, 1/2 teaspoon yellow mustard.
• Inject sauce in the entire turkey – inject deep into the muscle to prevent leaking of sauce and skin from scorching.
• Pat skin dry and roast in the oven 325° F for 2 1/2 - 3 hours.
