PIÑA COLADA QUESADILLA
1/4 cup coconut creme
1 can of crushed pineapple
1/4 cup brown sugar
3 tbs unsalted butter
Olive oil, for frying
• Preheat oven to 400 degrees.
• Melt some butter in a pan over medium heat. Then, add pineapple, brown sugar and coconut creme. Stir until it turns golden brown, then take off the heat. Set this piña colada mixture to the side.
• Next, take a tortilla and add some cheese to it, along with a couple of spoonfuls of the piña colada mixture. Then fold the tortilla over and seal the edges.
• Then heat up some olive oil and add quesadilla to the oil, flipping after it browns on one side. Use paper towels to absorb excess oil, then enjoy!
