Lamb Meatballs

2 lbs. ground lamb
1 egg
8 tablespoons of water
3/4 tablespoon table salt
1/2 cup of feta cheese
1 1/4 cup of panko breadcrumbs
2 small minced garlic cloves
2 tablespoons of tomato paste
Pinch of red pepper flakes
2 tablespoons of olive oil
3 tablespoons of chopped parsley
Zest of 1/2 lemon

28 oz. can of crushed/pureed tomatoes
1 minced clove of garlic
1 medium onion, chopped
Zest of 1/2 lemon
1 teaspoon dried oregano
1 teaspoon of salt
2 tablespoons of chopped parsley
1 tablespoon thinly sliced mint
1/3 cup of pitted chopped olives
Pinches of red pepper
1/4 cup of crumbled feta

• Mix the following ingredients in a large bowl: water, eggs, breadcrumbs, feta cheese, salt, pepper flakes, garlic, parsley, tomato paste, lemon zest, and ground lamb.
• Form the mixture into small balls.
• Cook balls in skillet with olive oil.
• To make your sauce, combine all of your ingredients in a sauce pot. Cook Greek Red Sauce on medium heat for about 25 minutes.
• When meatballs are done, add sauce to skillet and let them simmer for an additional 7 minutes.
