Zesty Zucchini Brownies

1/2 cup vegetable oil
1 1/2 cups white sugar
2 teaspoons vanilla extract
2 cups all-purpose flour
1/2 cup unsweetened cocoa powder
1 1/2 teaspoons baking soda
1 teaspoon salt
2 1/2 cups shredded zucchini
2 cups chopped walnuts
1/2 cup unsweetened cocoa powder
1/4 cup margarine
2 cups confectioner's sugar
1/4 cup milk
1/2 teaspoon vanilla extract

• First grease and flour a 9x13 inch pan and preheat the oven to 350 degrees F.
• Mix together oil, sugar, and 2 teaspoons vanilla in a large bowl until smoothly blended.
• In another bowl mix; flour, 1/2 cup cocoa, baking soda, and salt. Once done, add to the large bowl (sugar mix).
• Lastly, add in the zucchini and walnuts and evenly smooth into the prepared pan.
• Bake for 25 – 30 minutes until brownies are soft to the touch.
